After a weekend indulging in fatty foods, incredibly sweet desserts, and unforgiving snacks you may want to try something not so permanently damaging to your diet or lifestyle change. I’m not saying that these wonderful Quesadillas are completely and utterly fat free, but they do make me feel like I’m making a positive decision on this one meal, be it lunch or dinner. These veggie Quesadillas are made with wheat tortillas, Mexican cheese blend, delicious green and red bell peppers, sliced onions and spinach.

I do believe that these Quesadillas whether you add a little homemade guacamole and/or sour cream on the side, will definitely not disappoint. Enjoy!!!!
