YIELD: 4 TO 5 SERVINGS

INGREDIENTS:

  • Flatout flatbread
  • 1/2 red onion
  • 1/2 cucumber sliced
  • 2 roma tomatoes
  • arugula
  • 4 avocados smashed
  • 1 jalapeno sliced
  • 1 1/2lb large to jumbo shrimp
  • Bacon cooked and chopped
  • shredded carrots
  • Zatarains Shrimp Fry seasoning
  • 1/2 tsp Tony Chachere’s
  • 1/2 tsp black pepper
  • 1/2 tsp cumin
  • 1/2 tsp garlic salt
  • 1/2 tsp garlic powder
  • 1/2 tsp Old Bay Seasoning
  • 1 cup olive oil

FOR SRIRACHA MAYO

  • 1/2 lemon
  • 1/4 cup mayo
  • 1/4 cup sriracha
  • dash of old bay seasoning

DIRECTIONS;

  1. Preheat olive oil for shrimp on medium high
  2. Cook bacon until crispy and tear apart into small pieces and set aside
  3. Rinse shrimp well and then Season shrimp with old bay seasoning, tony chachere’s, black pepper and set aside
  4. Slice roma tomatoes, jalapeno, cucumber, and red onion. Arrange shredded carrots and Arugula on same plate as other veggies
  5. Mix mayo, sriracha, squeeze 1/2 lemon and a dash of old bay seasoning in small bowl and set aside
  6. Place enough Zatarains shrimp fry in separate plate for your shrimp station
  7. Take each shrimp and dredge in shrimp fry and place in hot pan of olive oil, be careful not to crowd them.
  8. Cook for about 2 to 3 mins each side until perfectly brown and crispy and place on separate plate lined with paper towel to catch excess oil
  9. Cut each avocado open and smash in separate bowl like a guacamole
  10. Add garlic salt, garlic powder, and cumin until desired taste is achieved.
  11. Heat each Flatout in microwave for about 10 seconds and spread avocado on top
  12. Arrange, arugula, tomatoes, carrots, jalapenos, and cucumbers on one end of wrap then add about 3 shrimp, drizzle sriracha mayo on top and crumble a few pieces of bacon on top
  13. Gently roll wrap until closed, cut in half and serve with fries or your favorite side item
