FRIED CHICKEN AND PEACH COBBLER GLAZED WAFFLES

INGREDIENTS FOR FRIED CHICKEN WINGS:

  • 1 pack chicken wings 6-8 wings
  • 1 ½ to 2 cups flour
  • ½ pack saltine crackers crushed (optional for crispy wings)
  • 2 to 3 cups cooking oil
  • 1 ½ tsp Tony Chacheres
  • 1 ½ tsp black pepper
  • 1 ½ tsp garlic salt
  • 1 ½ tsp garlic powder
  • ½ tsp cayenne pepper (optional for spicy wings)

INGREDIENTS FOR WAFFLES:

  • 1 ½ cups flour
  • 1 tsp salt
  • ½ tsp baking soda
  • 1 egg
  • ½ cup plus 1 tbsp sugar
  • 2 tbsp butter (softened)
  • 2 tbsp shortening
  • ½ cup half & half
  • ½ cup milk
  • ¼ cup buttermilk
  • ¼ tsp vanilla

INGREDIENTS FOR PEACH COBBLER GLAZE

  • 1 (15.25oz) can of peaches in heavy syrup
  • ½ bag of frozen peaches (small bag)
  • ½ to ¾ cup of sugar
  • ½ tsp cinnamon
  • ¼ tsp nutmeg
  • ½ tsp vanilla
  • ½ stick butter
  • 1 tbsp cornstarch

DIRECTIONS

FRIED CHICKEN WINGS:

  1. Heat cooking oil for wings in cast iron skillet
  2. Rinse chicken wings and season with 1 tsp of each seasoning. Set aside
  3. Place flour (and crushed crackers if using) in plastic bag or plate and season with other ½ of each seasoning. Mix well
  4. Dredge seasoned chicken wings in flour mixture and place in hot oil
  5. Cook wings until well done (about 15 mins or so) Set aside when brown and crispy. Remove skillet from stove.

WAFFLES:

  • Next, prepare waffle batter by combining flour, salt and baking soda in a medium bowl. Stir to combine
  • Lightly beat the egg in another medium bowl. Add the sugar, butter, and shortening and mix well with an electric mixer until smooth. Add the half & half, milk, buttermilk and vanilla. Mix well with whisk.
  • Add the dry flour mixture to wet mixture and beat with whisk until smooth. Set aside.
  • At this point you can heat your waffle iron and spray with nonstick spray

PEACH COBBLER GLAZE:

  1. Heat butter in sauce pan for peach cobbler glaze
  2. As butter melts place can of peaches and about ½ bag or less of frozen peaches
  3. Add sugar, cinnamon, nutmeg and vanilla and bring to slight boil (about 7 mins) Taste for accurate peach cobbler flavor
  4. Add cornstarch to about ¼ cup water and mix well with fork to make cornstarch slurry. Pour into peach mixture
  5. Let simmer for about 5 to 7 mins stirring occasionally and remove from heat

ALMOST FINISH!!!

  • Spoon 1/3 to ½ cup of waffle batter into waffle iron, cook until nice and brown
  • Plate waffles, then chicken wings on side and pour peach cobbler glaze over waffles. Add a dollop of whip cream in the center if you like and ENJOY!!!!!!
